Jenna, the St. Augustine nutritionist you met earlier this week, is sharing some of her favorite Christmas Cookie recipes!
She shared with me, “I got this recipe from one of my college roommates. Her grandmother would make them and send to us every month. They are my favorite kind of sugar cookies – soft on the inside with a little crunch on the outside. I make them extra thick.
“
Ingredients
- 1 cup butter, room temperature
- 2 cups sugar,
- 2 eggs
- 5 cups all-purpose flour
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup milk
- 1 teaspoon vanilla
- 1/3 stick of butter, room temperature
- 1 pound powdered sugar
- 1 teaspoon vanilla
- A couple of teaspoons of milk (until desired consistency is reached)
Grandma’s Frosting
Instructions
- Cream butter and sugar together until light and fluffy, about 5 minutes. Add
- vanilla and eggs and beat until well incorporated.
- In another bowl, mix together baking soda, baking powder, and flour.
- Add dry ingredients to butter/sugar mixture, alternating with the milk in
- three increments. Combine until smooth.
- Separate into 3-4 balls of dough. Wrap in plastic wrap, then flatten to make
- disks. (This helps when it’s time to roll out the dough.) Refrigerate for at least
- 2 hours.
- Preheat oven to 400 degrees. Flour counter top and roll out dough disk to
- desired thickness. Cut out shapes using cookie cutters.
- Bake on parchment lined baking sheet for 8-10 minutes (depending on thickness) or until light golden brown around the edges.
- Cool completely then ice with Grandma’s Frosting.
- Cream butter and powdered sugar together until a thick frosting is created. Add
- vanilla and milk until desired thickness is achieved (thick for piping icing or thinner
- for spreadable icing).
